peacamole

recipes for delicious things which are quick to pull together and can be offered to friends to stop them getting too hungry while you sort out food-proper are very precious.

as a result i was very keen to try clotilde’s peacamole which she says is her default choice of nibble to offer to guests. i was also charmed by the name and the opportunity to say the french version – poicamole – in an over the top french accent whenever anyone asked me what it was.

it’s very simple – peas blitzed together with almond butter for smoothness and creaminess plus garlic, tabasco sauce and coriander for a bit of a kick. it was nice enough on its own but even better when served with a young goats cheese. thanks clotilde.
