beautiful beetroot

any ideas how i use these gorgeous beetroot, which were a suprise in my vegetable box this week?

What an usual shape for beetroot!! you can roast them and put into salad. Also can make pickle and chocolate beetroot cake. :D

I would roast them with onions and balsamic vinegar and then if there were any leftovers slice them and ad them to a garden salad.

In case you want a recipe for the roasted beetroot, here is the Nigel Slater recipe I always use - it has converted several beetroot dislikers including myself: http://www.brittanygardenersclub.com/2009/07/roast-balsamic-beetroot.html

And in case you have any left for salad - combining with an equal amount oranges, and a lemon vinaigrette (lemonette?) is great as well.
