we had some overripe mangoes that needed using up and while some went into a breakfast smoothie, some went into this wonderfully fruity and exotic-tasting apricot and mango martini. i think it’s the first time david has made a fresh fruit martini but i doubt it will be the last. i'd quite like to try this with fresh apricots mixed with the mango.
to make one, muddle a handful of ripe fresh chopped mango in the base of a shaker. add 2 shots gin, ½ a shot apricot brandy liqueur, ¾ a shot of lemon juice and ½ a shot sugar syrup. shake with ice then strain into a glass. garnish with a lemon twist.
