oregano ideas needed

my oregano plant has gone crazy - i'm about to repot it so the wicker basket it has colonised can become home to my alpine strawberries.

any ideas for using up all the oregano that gets pruned? is oregano pesto a good idea? what else?

Anything Greek is a good idea. Just dry it and save it for cooking.

Mine's gone mental too - looking forward to reading some suggestions! I think there are a few Ottolenghi recipes that call for oregano.

i've seen oregano pesto recipes with hazelnius and walnuts - that might be nice?

excellent, slow-roasted greek lamb with ottolenghi aubergines will be the basis of one of our easter meals. i'll look up the pesto recipes too. thank you.
