strawberry violet verrine

in addition to asparagus, natoora sent me a box of italian strawberries. i wanted to eat these as simply as possible, given it was my first chance to eat decent and properly flavoured strawberries of the year.
i kept it simple – the strawberries (apart from a few which i kept as a garnish) were mixed with violet syrup and a little caster sugar. i then mixed together some mascarpone and some (no-fat) greek yoghurt – you can use any combination of creamy loveliness, depending what you have in. the mascarpone yoghurt mix was layered, with the strawberries in the middle. a grating of violet chocolate from rococo and a few strawberries to garnish were the finishing touches.
this took c10 minutes to pull together and was eaten almost immediately - the violet makes it taste exotic and, if your strawberries are good, it is all you need to make something simple taste a little bit special.
