courgette and parma ham salad

my vegetable growing efforts are a bit slow this year. i planted things a bit later than previously, knowing we’d be away at easter and not wanting my seedlings to die before they got established.

as a result we’ve just eaten our first courgette, five weeks later than last year. as previously, i kept things simple – a lemon and olive oil dressing for the courgette ribbons which were layered with parmesan shavings and parma ham before being sprinkled with basil. it’s a very simple recipe which, i think, looks impressive and showcases the flavour of young courgettes really well.

courgette and parma ham tagliatelle

i’m revisiting lots of old favourites at the moment – when i update the column on the right each month i am reminded of what i have cooked in previous years and often find things i love but have completely forgotten about!

the angela hartnett pea and parma pasta recipe is not something i’ve forgotten but it probably is a year since i made it – it’s such a summery dish you really do need warm weather and a cold glass of white wine to appreciate it at its best.

this was a variation, using courgettes in place of peas (i fried the courgette in a little butter, adding the garlic when it was almost done; you can then follow the original recipe). i’ve also made a version with asparagus. all are worth trying if you want something quick, light and delicious to celebrate a summer’s day.

a festive salad

pomegranates and walnuts – two delicious ingredients which, i think, make eating salad a good idea despite the chilly weather.

i’m sure i’ve done something like this before. or, if this exact combination is new to me, perhaps it’s just that the various ingredients are old favourites, which i regularly turn to.

the leaves are dressed simple with walnut oil and lemon juice. i topped these with pieces of parma ham, lightly toasted walnuts and fresh goats curd before sprinkling with pomegranate seeds and a drizzle of 12yo balsamic vinegar.

it took 5 minutes to make and a similar amount of time to eat but is a great way to start a meal which is going to place more onerous demands on you and your stomach. something to bear in mind as we approach the festive season, perhaps?

pea and parma ham pasta

this angela hartnett recipe for linguine with peas and parma ham is an old favourite. the variation this week was to use smoked garlic in the recipe and smoked salt for seasoning. it added a subtle additional layer of flavour to an already delicious and fantastically easy dish.

courgette, parmesan and parma ham salad

my first courgette has been eaten! i’ve read lots of things about home-grown vegetables tasting so much nicer than bought ones and it was wonderful to be able to put this theory to the test at last.

 

i decided to take inspiration from a skye gyngell recipe and tossed courgette ribbons and parmesan shavings with some lemon juice and olive oil. i then layered the mixture with some parma ham (courgette, ham, courgette, ham) and topped it off with some mustard leaves which i also grew.

 

it tasted amazingly good – the courgette itself had a more distinct and “greener” flavour than shop-bought courgettes. this might be due to it being just-picked, slightly smaller than the ones you buy and, obviously, because of the tlc david and i have been giving to our garden as we try and grow some vegetables! the recipe also helped – one courgette made two ample starters and the flavours worked brilliantly together. skye suggests adding crème fraiche as well.

 

i have a second courgette on its way and can’t wait to try something else with that!

 

update: i used this same recipe for the second courgette, but added slices of avocado in the middle. much more filling but a good alternative.
