10 october is world egg day. a perfect excuse, i think, to encourage food bloggers to share recipes which show just how versatile and delicious eggs are.
eggs are very important nutritionally:*
- in proportion to their calorie content, they provide 12% of the daily value for protein and a wide variety of other nutrients such as vitamin a, b6, b12, folate, iron, phosphorus, and zinc. this is for as little as 75 calories!
- egg protein quality is so high that scientists often use eggs as the standard by which the protein quality of other foods is measured. all the important amino acids, the building blocks of body protein, are found in an egg in the right proportions for your body’s needs.
- two-thirds of the fat found in eggs is the healthy unsaturated kind and they contain no trans-fats.
they are also very useful in the kitchen either as the star ingredient – scrambled, poached or fried eggs make a great breakfast; soufflés are guaranteed to impress; meringues rely on egg whites and custards rely on the yolks – or as part of the bigger picture such as when they are used in cakes, pastries, sauces and other dishes.
