roasted sausages with fennel and tomato

a couple of years ago i came up with a recipe for roasted sausages with fennel and cherry tomatoes. it is incredibly quick, easy and packed full of flavour.

i love it with crusty bread smeared with butter. last night we had it with a side portion of cavolo nero cooked with garlic and chilli.

the original recipe for the sausages is here but it is something you can adapt according to what you fancy. this time i tossed sausages (i still rate marks & spencer sausages as particularly good), cherry tomatoes and sliced fennel with  glugs of olive oil, balsamic vinegar and red wine. a sprinkling of chopped rosemary, dried oregano, a bay leaf, garlic, salt and pepper were the extra bits needed. an hour in the over at 200c and the result was truly delicious. you really should try it.

I made this with balsamic, wine, bay leaves, oregano, olive oil, sicillian sausages, tomato and fennel. It was amazing!! Really really delicouse! My very very foodie brother gave it a very firm thumbs up and my boyfriend is currnently reministing with misty eyes. I only wish I'd made more!

i do adore this dish and have served it to lots of friends as i think the depth of flavour is great given how easy it is to pull together. it's also a regular for david and i - 'tis on the menu for this wekeend in fact, with the last of the tomatoes we grew in the garden.

Abby - about to eat yesterday's left overs with some rigatoni....

Was working from home yesterday to a tight deadline - last minute my friend Tom called to say he would come and see me. Jetlagged, just returned from a three week wedding in Kerala and the backwaters on a boat, he needed "welcome back to grey, cold, rainy London".

This went down a treat with, exactly as you suggested, crusty bread and a green salad. So much enjoyed that we had to go and smoke a shisha afterwards on the Edgware Road.

Now I'm looking forward to second helpings!

PS: Waitrose Toulouse sausages were exceptional - I didn't really think about it when I bought them, but their robustness seemed to really complement this recipe perfectly....

I made this last night having come across your blog yesterday. ABSOLUTELY GORGEOUS! Like Julia I had some Waitrose toulouse sausages and they were perfect. I also threw in a whole garlic bulb and then squashed it out and mixed with some olive oil and salt to spread on the bread. When it came out of the oven I thought "thats looks like too much for 2 of us" and 10 minutes later I was scraping the last of the bread around the tin!

hi jane, i'm glad you liked it. i am always slightly horrified at how much of a piglet i can be with this recipe! i love the idea of smearing the bread with roasted garlic - thanks for the tip.
