spicy lime chicken stir fry

this was a quick n easy snack that used up some leftover chicken breasts. i cut the chicken into pieces and marinated it for 10 minutes with chopped garlic and grated ginger plus slugs of tabasco (i’d normally have used fresh chilli but had run out and didn’t want to head out to stock up) and vegetable oil.

i stir fried the chicken, adding some salt and freshly ground pepper plus lime juice, once the chicken was almost cooked. a handful of chopped coriander leaves was the final addition.

this was a wonderfully fresh and zingy dish - normally i’d have this stirred through with rice noodles (perfect for a packed lunch) or rice. today i was lazy and ate it on its own as a snack. yummy.
