crab & courgette linguine

Today we ate lunch in the garden, for the first time this year, which was absolutely blissful. Our spring bulbs are out - yellow and white narcissus, snow drops, muscari, fritilaria - the cherry blossom tree has started to flower and the sun was shining.  

It was a simple meal of crab and courgette linguine with a watercress salad. While the pasta cooked I grated a courgette and, wrapping it in a clean tea towel, wrung out the excess liquid. The grated courgette and a small tin of white crab meat were mixed with some olive oil, juice and zest of a lemon, some dried chilli, salt and pepper before being mixed with the hot pasta. I made a simple dressing for the salad - olive oil, lemon juice and Dijon mustard.
