snowy rocky road

this was the big hit at the party we had at the weekend – white chocolate studded with marshmallow, pistachio nuts, jewel-red sour berries, biscuits and coconut. it’s wonderfully easy to make (just be patient when the white chocolate is melting, it’s trickier than milk and plain chocolate) and looks fabulous – perfect for a party or as a gift.
snowy rocky road (makes a 500g slab – i cut this into 30 bitesize pieces)
400g white chocolate (chopped)
30g mini marshmallows
50g desiccated coconut, plus extra to decorate
75g dried cranberries
50g pistachios
50g ginger nut or amaretti biscuits, roughly chopped
silver balls to decorate
line a tin (mine was 20cm square) with clingfilm. melt the chocolate (i use a bain marie). stir in the marshmallows, coconut, cranberries, pistachios and biscuits then empty into the prepared tin. level the surface then scatter with coconut and silver balls, put in the fridge to solidify (you can put it in the freezer if you’re in a rush). cut into squares before serving.
