french toast with figs

David and i try and eat breakfast together at the weekends and yesterday i wanted to make something that would feel like a bit of a treat.

growing up i would often have french toast if friends were staying over – i used to love to spread mine with golden syrup or sprinkle it with a mix of sugar and cinnamon. this is a slightly more grown up version – but only just.

the french toast is made by dipping your bread into beaten egg (which you can flavour this with spices if you like) and then frying it in butter. once the bread was in the pan i sprinkled the top with a little demerara sugar so that, when i turned it over to cook i would get a lightly caramelised effect. perfectly ripe figs and Canadian maple syrup finished it off perfectly.
