salmon with cherry tomatoes and black garlic
This pasta dish was just lovely when we had the recent spell of mild sunny weather. I marinated some salmon in olive oil, lemon juice, salt and pepper and then grilled it until it was just cooked. The flaked salmon and its juices were mixed with chopped cherry tomatoes, fresh basil, black garlic (roasted would also be nice), a little red chilli and some pasta. Add extra olive oil or lemon juice to taste and then tuck in.
