This is a fabulous aperitif for summer – it uses campari which has a real bitterness to it, but the other ingredients balance it really well and there is an underlying richness and depth of flavour. It’s freshened up with some sparkling water and is perfect for sipping on a sunny evening.
To make, put 2 shots of sparkling or soda water into a glass. In a cocktail shaker, mix 2 shots campari, ¾ shot of lemon juice, ¾ shot sugar syrup then shake with ice. Strain into your glass and add ice. Top with 1 shot sweet vermouth and stir. Garnish with an orange slice.
