i b damm’d

This is a take on an I B Damm’d which uses genever (a traditional Dutch spirit from which gin evolved) and peach liqueur, neither of which we have. However I had recently poached some white peaches in a light sugar syrup that also contained white wine and lemon zest and had leftover syrup, which had a wonderfully perfumed peach flavour. So, we decided to press ahead, using in place of the peach liqueur and gin in place of the genever. The result was a beautifully subtle drink, combining fruit and floral flavours.

Combine 2 shots gin, ½ shot elderflower liquer, ¼ shot of peach liqueur and 1 ¾ shots cloudy apple juice. Shake with ice and strain into a martin glass. Garnish with a slice of peach.
