best broccoli. and cauliflower.

since falling in love with the best broccoli recipe back in april, i have cooked it regularly. a bit too regularly it has sometimes felt like so, this weekend, i decided to make a change. nothing major, just the addition of some cauliflower florets.

i love cauliflower, especially if it is covered with a velvety blanket of cheese sauce, but david is not keen. i think the new version of "best broc & cauli" tempted him to eat a bit more than usual but there were still leftovers. which i turned into a version of my easy broccoli and cauliflower soup.

roasted broccoli with prawns 

having got completely over-excited about roasted broccoli with lemon, parmesan, pine nuts and basil (aka best broccoli) and having eaten it a bit too often in recent weeks, i was keen to try melissa clerk’s roasted broccoli with prawns, which has recently caught the wednesday chef’s imagination.

 

given it’s a roast broccoli dish you might struggle to get it onto the menu if you are cooking for someone who is pleading for less ‘best broccoli’ but be sneaky, it’s quite different and worth a try.

 

the difference comes from the flavourings - in this case coriander and cumin seeds plus a bit of chilli add a wonderful spiciness. lemon is still involved adding its lovely summery zing which brightens all the other flavours. the prawns taste great roasted and david and i happily polished off a huge serving each.

 

we ate it with warm bruschetta which didn’t quite work. rice or flat breads seem the more obvious answer. or would you suggest something else?

best broccoli... best courgette?

the best broccoli recipe i posted last month – roasted broccoli with garlic, lemon, parmesan, pine nuts and basil – has been making me smile at many meals now. this weekend i decided to try a variation and it was uber-delish.

 

i didn’t do much different, just adding courgette batons to the broccoli when i put it in the oven. i’ll be having this again, you should give it a try.

chicken and broccoli rice salad

 

i’ve been loving the “best broccoli” recipe that i discovered a couple of weeks ago and, having made a huge tray of it to go with roast chicken, i used the leftovers to make this simple rice salad.

 

it was very easy – basmati rice mixed with leftover broccoli, small pieces of leftover roasted chicken, lemon zest and juice, a handful of toasted pine nuts and some shredded basil. very simple, a great way to turn one meal (roasted chicken with roasted broccoli) into two meals, and very delicious.

best broccoli

when i read about adam’s “best broccoli of your life” i knew i had to try it. i’m a long time fan of roasted broccoli – there is a delia smith recipe which roasts broccoli and cauliflower with lots of garlic, olive oil and crushed coriander seeds which i love.

 

adam’s recipe (actually it belongs to someone called the barefoot contessa, whoever she is) has lots of similarities with the broccoli and anchovy (or bacon) orrechiette but, instead of relying on anchovies or bacon to add depth of flavour gets the brocccoli to do all the work, by roasting it until the edges brown and go crunchy.

 

i didn’t have much broccoli in so decided to bulk this out with pasta which was delicious. the broccoli on its own is really good too and i’m planning another batch to go with a roast chicken we’ll be having over the weekend
