suprisingly subtle

the fishcakes which i made with the highland red potatoes are definitely pink but not off-puttingly so. in fact, with the green of the spinach i think they look quite pretty. the taste is exactly the same as if i'd used a non-coloured potato.

roasted sweet potato salad with blue cheese

 

over the past week or so the weather in london has started to turn. i’m not ready to use the “a” word but there is a definite nip in the air and warm snugly clothes are looking more appealing than my summer sandals.

this means i’m starting to change what i want to eat, although i’m not ready to succumb to stews and bakes. this roasted sweet potato salad is a good half-way house, with the slightly caramelised pepper and potato hinting at the warming foods which will be appearing in the coming months, while the salad keeps things light.

feast for a fiver 

my recipes for lemon & mackerel pilaf and berry ripple ice cream have been featured in today's guardian newspaper, in an article which called for people to share their menus for two courses which feed two people for under a fiver. see what other menus were suggested here, including one from dinner diary.

the article was in response to a series of menus suggested by well-known chefs which were derided on the guardian blog for being unimaginative. i think we, the readers, did better than the chefs. what do you think?

green tart

for many people weekends seem to be a time to think about what exciting, exotic and time-consuming dishes they can create in the extra hours that they have. i do this too, especially if we have friends coming over as i always see guests as an opportunity to try new things.

 

however, things have been a little different recently – my weekend cooking currently seems to focus around the various vegetables which i have sitting in my kitchen and which need to be used up before they are past their best and beyond redemption.

 

later in the week i’ll fill you in on how i managed to use up the final half of a savoy cabbage which was only a few days away from the bin (exciting stuff eh?), but first a green tart which created a magnificent home for wilting spinach, yellowing leeks and softening courgettes. sorry if that sounds horrid, my intention is to reassure you that this recipe is fine for vegetables which are a little past their best!

sausage, spinach and fennel with linguine

as for many people, january is a time of year when i think about healthy eating. often i use this month to detox, cutting out booze, caffeine and junk, however, this year i know that i haven’t got the willpower so i’m sticking to the simple aim of trying to boost my fruit and vegetable intake.

 

spinach is an absolute life-saver when it comes to this, as there are very few dishes which can’t cope with having a handful or two of spinach wilted in (unless, of course, you’re a member of the great spinach-hating clan who liken its cooked texture and flavour to wet socks!).

 

this dish ticks the hearty meaty meal box but has the added advantage of including several portions of vegetables which will ease any new year guilt that you might be feeling about what you are eating.
